
Chicken Tacos (Healthy too!)

Prep Time: 15 Minutes
Ingredients:
- 1 - chicken breast per person eating (this may vary depending on the size of the chicken breast, or if children are eating)
- 1- can green sauce (this can be found in the Mexican food isle. I usually grab the cheapest, and organic if they have it, any brand will work)
- 1 - handful of baby carrots per person eating
- 1/2 -onion chopped
- chiles/jalepenos to taste if desired
- 1 package tortillas (for a healthy meal, we use whole wheat tortillas (to keep them fresh freeze them)
- Shredded cheese (we use cheddar, but you can use lowfat cheese of any flavor to make it healthier)
- Other condiments that you enjoy
- 1 can black beans (depending on the amount of people eating). We use the organic black beans at Trader Joes, they are VERY tasty, and healthy
1) (In the morning or afternoon) Throw the chicken, carrots, green sauce, onions, chiles, jalepenos, and baby carrots in the crock pot. The time and temp varies by crock pot and time you have to cook. You can throw it in the morning on low, or in the afternoon on high.
When you are ready to eat:
2) Take out the tortilla (defrost and warm as desired)
3) Cook the back beans
4) Dish the chicken, sauce and beans on the tortillas
5) Sprinkle with cheese and other condiments that you enjoy
6) Spoon out carrots as a side dish
7) Eat and Enjoy!
